Chef Cory Burke
Cory Burke is the owner and founder of the newly launched food truck, Roti Rolls. His truck specializes in serving all local meats and vegetables in an Indian flatbread called roti bread. You might call it "farm to truck." Hailing from Concord, New Hampshire, Cory has worked in various restaurants in both New England and Charleston. His interest in local food was peaked while working for Eric Warnstedt at the highly acclaimed Hen of the Wood at the Grist Mill in Waterbury, Vermont. During this time, he also worked for the New England Culinary Institute, collaborating with innovative local chefs. He brought his love for local food back to Charleston, working at the Art Institute of Charleston while he dreamed up the idea of a local yet international food truck. Currently, Cory spends his time roaming the street of Charleston in what he calls "the green machine" and meeting with local purveyors to ensure the street food revolution is fueled by local food. He is one of the founders of the Charleston Food Truck Federation and enjoys spending his time with fellow "truckers." He hopes one day food trucks will be able to freely roam the streets of Charleston and set up a food truck court downtown.
